Black Bean Brownies

I’ve been hearing a lot about Black Bean Brownies lately, so I decided I needed to try them out on my little taste-testers.

“I don’t like black beans!!” my 6-year old immediately protested.

“I have a feeling you’re going to like these. They’re chocolate.” Music to her ears.

I recruited her and her sister to help me with making them to help encourage their interest in eating black beans.

This was super easy to throw together. We just took all the ingredients and put them into our food processor (that I actually forgot we had) and blended it up.

Next we mixed in the chocolate chips and spread it out into our brownie pan. (Also forgot we had one of those, too). And threw it into the oven.

It ended up being an easy, super-delicious, healthy snack to make that I can include in their lunches. There’s an option to include 2 tbsp. of sugar in these. Which I don’t think is too bad for an entire pan of brownies. But if you really want to avoid white sugar, you can just use more maple syrup instead.

Here’s the recipe.

Ingredients:

1 15-oz can of black beans – they need to be drained and rinsed very well

2 tbsp cocoa powder

1/2 cup oats

1/4 tsp sea salt

1/3 cup pure maple syrup – or you can use honey (use 1/2 cup if you’re not using the 2 tbsp of sugar)

2 tbsp sugar

1/4 cup coconut oil

2 tsp pure vanilla extract

1/2 tsp baking powder

1/2 cup chocolate chips

Instructions:

Preheat oven to 350 F.

Put everything into the food processor except for the chocolate chips and blend very well. I think you could also use a blender – but you would have to make sure the ingredients are very smooth.

Stir in the chocolate chips, then pour into a greased pan.

Cook for 15-18 minutes, then let cool at least 10 minutes before cutting.

Enjoy! Even my picky, black-bean-hating 6-year old found these a decadent treat. Definitely putting them into their lunch tomorrow.

  1. This is a win for the non meat eating picky eater! If all it takes is a bit of chocolate to get more protein into her diet, I say go for it!
