PB, Banana & Chia Toast: A Twist on a Classic

Breakfast time can be a bit tough around my house. Especially during the week.

It’s rushed and hectic. My kids often all need me at once. Lately there’s been quite a bit of crying. (I’m hoping it’s just the adjustment of easing into the school year). So, anyway – I rarely have time to put a lot of effort into breakfast.

My 6-year old will only eat a bowl of cereal. Every. Single. Day. On the one hand, it’s nice and easy! On the other, I kind of wish she would start her day with a little bit of variety. On the opposite end of the spectrum, my 4-year old has now decided that she doesn’t know what she wants to eat each and every morning.

The other day, I decided to introduce her to a classic: peanut butter and banana on toast. Up until now, my kids have been quite averse to me combining foods. They’ll eat a banana – no problem. And they love peanut butter on toast. But put those two together and they look at me like I’ve served them a pile of poop on their plate.

They prefer their meals to be ‘deconstructed’ for the most part.

On this morning, I decided to give the combination a go. And I also decided to up the nutrients a touch by sprinkling some chia seeds on the toast. The key for me was to ‘hide’ the chia seeds under the banana. So I spread some pb on the toast, sprinkled the chia seeds, then sliced the banana on top and then gave it to my kid.

“What are these little things?” she asked within 3 seconds of looking at her toast.

Damn kids.

“They’re called chia seeds. They add some crunch!” I explained, hoping it wouldn’t completely set her off.

She took a bite and – lo and behold – she liked it! Lauren likes it!!!

“This is yummy!” she smiled.

Phew. It may not be rocket science – but I found this little twist on the classic toast super easy and a good one for the kids to start their day with.
